Oh Marzipan – ginger marzipan truffles recipe
The freshest tasting marzipan you have ever tried!
This time of year I love making Marzipan. I get making batches ready for Christmas and freezing them until I need it, which is mainly for the Christmas cake. But I also love making these sweet treats not just for the family to eat but also friends and neighbours, as they make the perfect homemade gift.

Ingredients
- 165g ground almonds
- 125g icing sugar
- 1 tsp almond essence
- 2 1/2 tbsp water
- 100mls soya cream or cream alternative
- 125g vegan chocolate
- 1 tsp of ground ginger
Instructions
Marzipan
- place the ground almonds, ginger and icing sugar into a blender. Turn the blender on and after a minute slowly add in the almond essence and water. Wait until it comes together into a ball.
- Place sifted icing sugar out onto a board and place the marzipan on top and knead slightly to bring it together.
- Grab some scales and start pinching off small parts of the marzipan and weigh each bit to roughly 8g pieces. or go as big or as small as you like just ensure they all weigh the same to ensure they all look the same at the end.
- roll each weighed out piece in your palms and leave to one side.
gnache
- Heat the cream in a bowl in the microwave until bubbling approx 1 min on high heat setting.
- break up the chocolate into small pieces and add into the cream. Stir well until fully combined.
- Now dip the marzipan balls into the chocolate and then onto some greaseproof paper. Place some glacier ginger pieces on the top before placing into the fridge to set.
