Oh my goodness, this was sooo good!
I cooked up some bacon and set it off to the side. Cooked sliced chicken thighs in the bacon grease, set it to the side. Deglaze the pan with the white wine and let it reduce. Add spinach and garlic until wilted down. Add sliced mushrooms and put chicken back into pan. Now add the heavy cream. Bring up to a simmer and let all the flavors blend together. I had a parmesan and fontina blend I added some into the sauce. Mix in your cooked linguine and time to plate up. Top it with more cheese and your bacon.
Yum! Nice and creamy. The flavors of the chicken, mushrooms and spinach go together well, then you have the slight bite from the cheese and the nice crunchy, smokiness from the bacon. The linguine is like the canvas holding your masterpiece.
