One of my best burgers ever – hatch green chili, chipotle and bacon smash
Hatch green chili and chipotle flavors with bacon for the win!
Folks, I understand that I may have beat the smash burger thing to death here on FoodTribe, but tonight's dinner was so @#$%ing damn good, I had to share it with you!
I started earlier in the day by draining a can of hatch green chilis and mixing it with mayo, Texas Pete hot sauce, and a locally sourced meat rub from 3 Beer Rub called Smokin' Chipotle Rub. The Smoking' Chipotle rub has a mild spiciness to it and a really nice, mellow smokiness. I mixed up my burger topping sauce and let it sit in the 'fridge so all of the flavors could mingle properly.
This had a really nice flavor!
To prepare myself to make the smash burgers for dinner, I went out into my wife's garden and harvested some of her mint leaves. These went into mojitos, so that I could be properly lubricated for cooking! Once the cocktail was flowing, I fired up the Blackstone flattop and set to some patty smashing.

Once the smash burgers came off the grill, it was time to dress mine up for dinner. I started by piling up my bacon on top, and then adding the standard veggies; lettuce, tomato, and onion. Then, on the opposite toasted bun top, I added a healthy dollop of my hatch green chili and chipotle sauce. With smash burgers, messiness seems to be a the indicator of how good the burger is going to be; the more mess, the better it tastes. And this was one messy burger once the top bun was squished onto the rest of the sandwich!

Oh, holy hell! This was one damn good burger! My head swelled up because I put together such a great burger! HAHAHAHA!
The flavors were off the chain! Smash burgers are so juicy and good on their own, but the bacon added extra umami flavor that kicked it up a bunch extra. The lettuce, tomato, and onion added the familiar flavors, and just the perfect crunch to the texture (from the lettuce!). And to cap it all off was the hatch green chili and chipotle sauce; it was mildly spicy and tangy! It had a nice slow build of heat and was packed with awesomeness. All of this was surrounded with a toasted bun - dredged through burger grease on the Blackstone and toasted to a nice crispness that added the perfect texture. Damn! I'm good at this!
