The wild game food trend is going strong. No antibiotics, grass fed, and hopefully not gamey tasting. Elk is typically does not have the tang of an irony game like antelope or duck can have. No need to soak this stuff in milk or add bacon! It is very easy to over cook Elk as there isn't much fat on it. Ruining it can amount to tossing money into the trash and a bruised ego. Don't get too upset, I've done it and I imagine many other hunters have too.

That looks very tasty! I would love the chance to try elk. I have had a few wild meats.
I have elk, antelope, wild pig, and black bear in the freezer. Not to mention some Dungeness crab and Lingcod I caught off Shelter Cove, CA.
Right now I have none in the freezer but I have had black bear, deer, boar, and kind of had moose.
