Celebrating the return of a fishmonger van to Sandy, I bought tuna

And having bought tuna, I went online for inspiration.

I ended up with a marinade made from 2 lemons and a lime (because they were getting long in the tooth), a cube of garlic and ginger paste, some honey, some soy, and some kashmiri chili powder. And I did the marinade through the afternoon, then separated and added some water/cornflower (sp? seems to be what the site wants) to thicken.

I overcooked the veg because a) I never know how long stir-fry takes and b) I was more worried about overcooking the tuna.

I'm glad we have a fishmonger! The veg - 5/10, the tune and sauce, more 8/10.

  • Looks great! Enjoy it! Also, to avoid overcooking tuna, I am putting it into freezer for an hour and then frying it quickly with a bit of grape seed oil in very hot heavy bottom frying pan, like WOLL, on wok burner. It will have nice crust outside and still be cold inside.

  • For a future dish if u like salad do a tuna salad and make a chilli lime dressing, there's 2 options that I use one is slice a chilli and leave it in lime juice for and hour to infuse. Then pour over the salad. Depending how hot u like it add more or less chilli. Or a lemon vinegarette mix 2 tablespoons of extra virgin olive oil, juice and zest one lemon and a finely diced shallot. Then coat both sides of the tuna and cook as desired.
