Pancake cereal is a thing now

The lockdown has driven people to the very limits of experimentation

Lockdown life has lead us to explore a whole new set of combinations. Office workers operating from home have combined pyjama bottoms and a shirt and tie for Zoom calls. Desperate home cooks have combined all manner of things to cobble together meals. Now, people are combining pancakes with cereal to create a delicious looking lockdown snack.

Home cookery has become all the rage during the COVID-19 pandemic: for the first time it seems people are actually bothering to make those weird recipes you see on social media.

The newest of these online trends is pancake cereal; little tiny pancakes thrown into a bowl and smothered with the tastiest toppings you've got in the back of the cupboard.

To make them, it's simply a matter of mixing up some pancake batter and cooking tiny little 1 teaspoon dollops in a pan. Make sure to use plenty of butter with these; they'll taste best if they've got plenty of fat cooked into them.

These mini pancakes have been popping up all over the internet, with hundreds of people on TikTok sharing their experience of making them.

Sam Schnur has suggested a few amazing looking additions: she's made a batch with mini M&Ms mixed into the pancakes, and some with chocolate chips dropped into the uncooked batter. The results are absolutely mouth watering and I would just love to give this a go. If only there was any flour in the supermarkets.

  • Tried to make this today. Mine came out to big. I was using a bigger spoon. Also think you need to make the pancake batter a little thicker than normal. Just means I need to practice more!
