The basics of curry making have been covered in my earlier posts, so i'll only mention the spices i use, the quantities can be seen. This is quite a spicey dish, sometimes i like it rammed with spices other times not so much; cold winter days require more i find. The spices include - Turmeric - cumin - fenugreek - chilli powder and crushed - fennel - green cardamon - cloves - onion seeds - niger seeds - cinnamon stick and powder - jagger sugar - bay leaves . I made this one a while ago and can't remember every part of the making of it, so you'll have to do a bit of guess work in making it yourself. The sausage is your oil, take a good piece and cook first, this will give you the oil you need. Add the sugar at the end and add the bay leaves to juice. gx
