Pasta scheme: important differences
Cacio e pepe, Gricia, Amatriciana, Carbonara, it's simpl
Outside of Italy, there can be a little confusion, so let's try to clarify some recipes within common ingredients.
Some time ago, Valentina Zanola published the Carbonara recipe, instead I the Amatriciana recipe. Two other dishes can be confusing: Gricia and Cacio e Pepe.
