Peach Cobbler

A delicious way to serve up some of the summer's bounty

I recently purchased some locally grown peaches from a local farmer. They were good, but after a week, I began to worry that they would go bad before people had a chance to finish eating them. My husband suggested that I use them to make a Peach Cobbler, so I tracked down a decent looking recipe ( ) and dived in. For once, I actually followed a recipe as written, except for slight modifications to cut down on sodium (skipping salt, using less baking powder, swapping in unsalted butter for the usual kind). I thought it was a bit too sweet, but it was a roaring success with my family: everybody loved it, and the "kids" even want to have some for breakfast!  I guess I'll be making it again some time! 😊
