Ingredients
1 pineapple
1 cucumber
Bunch of coriander
Method
Heat barbecue, skillet or griddle pan
Remove the skin from the pineapple and slice in to about 1cm thick slices, top to bottom.
Place the pineapple onto your desired cooking apparatus and make some nice char marks.
Remove and allow to cool.
When cool cut into 1cm cube sized pieces, do the same with the cucumber.
Roughly chop the coriander and in a bowl mix all the ingredients together.

That sounds absolutely delicious! Other than lamb what would it taste good with?
Chicken or pork would be good to go with it. Jamaican marinade would work with on the meat aswell to complement the pineapple flavour.
