Pork and Chicken Adobo recipe: The national dish of The Philippines
Adobo is The Philippine National Dish. The word Adobo was derived from the Spanish word “adobar”, meaning to marinate.
This version of Filipino Adobo suggests marinating the pork in soy sauce and crushed garlic. By preference, vinegar can also be added as a marinade ingredient. Mexican adobo, on the other hand, makes use of chillies, garlic, cinnamon, and oregano as a marinade. Both dishes look and taste different. It would be unfair to compare which among the two dishes are best because each of us has our own preference when it comes to flavor.
Almost every region in the Philippines have their own version of pork adobo. Sometimes, there can be more than one version in a location. There are also similar versions with additional ingredients like coconut oil and chillies, pineapple and other vegetables, as well as a seafood version.
I cook my Pork and Chicken Adobo with Potato and Egg all the time because it's my favorite version of adobo. As I promised to Jane, I will share this very easy Adobo recipe of mine for all of you to enjoy .
Pork and Chicken Adobo is a version of Filipino adobo. Adobo is considered as the signature dish of the Philippines.
Ingredients
- 1 1/2 lbs pork shoulder/ pork belly chopped
- 1 1/2 lbs chicken cut into serving pieces
- 4 pieces dried bay leaves
- 2 teaspoons whole peppercorn
- 1 head garlic slightly crushed
- 6 tablespoons cane vinegar
- 1/2 cup Filipino soy sauce (if available)
- 2 diced potato (large dice)
- 3 pcs hard boiled eggs (depend on preference)
- 2 teaspoon of sugar
- 1 onion
- 1 tablespoon oyster sauce
- 3 tablespoons cooking oil
Instructions
- Heat oil in a pan.
- Once the oil becomes hot, add the garlic, onion and diced potato. Cook until the color turns golden brown.
- Remove the garlic and set aside. Add pork and chicken. Cook for 5 minutes or until the color turns light brown.
- Add whole peppercorn, bay leaves, oyster sauce, soy sauce, and water. Let boil and simmer until the meat gets tender.
- Add the sugar and stir.
- Pour in vinegar. and let boil. Simmer until most of the liquid evaporates.
- Add salt to taste. Put in the fried garlic, stir, and cook for 2 minutes.
- Serve. Share and enjoy!
