As a morning person, one of my favourite aspects of being up and about early is getting to sit in a cafe or coffee shop whilst it's still quiet and calm, watching as the world slowly wakes up to a new day. My university opened a Pret on campus last year, and it became a habit of mine to grab a breakfast brioche and an oat-milk mocha, and sit down to finish reading for seminars. Pret's breakfast menu has two brioche options: one with bacon and egg; another with a mushroom and spinach omelette, tomatoes and mature cheese. Of course, my morning cafe tradition isn't possible right now but I've tried to keep it going at home, which has included creating a Pret-inspired bun. So, here it is: a buttery brioche filled with chipolata sausages, fluffy scrambled eggs (with a pinch of chopped spring onions) and sweet cherry tomatoes.
