I've been i​nspired by Jane Fyffe to post my favourite side dish: buckwheat and pearl barley stir fry with vegetables. The great thing is that it doesn't necessarily have to be buckwheat or pearl barley. It can also be your rice of choice, lentil, couscous, or even pasta. It also applies to vegetables (you can add whatever you have in your fridge). This dish is universal, not complicated and what's more, it tastes fantastic!

Q​uick buckwheat and pearl barley vegetable stir fry

Ingredients

  • Pearl barley (x200g)
  • B​uckwheat groats (x100g)
  • 1/4 yellow, red, green bell pepper
  • x2 small carrots
  • x​2 onions
  • 1 can (x75g) green peas (drained and rinsed)
  • 1 can (75g) corn (drained and rinsed)
  • 100g of frozen green bean
  • S​easonings: 1 teaspoon of garlic powder, 1/2 teaspoon of curry, 1/2 teaspoon of sweet pepper powder, salt and pepper to taste
  • ​1 Tablespoon of Oil

Instructions

  1. To a big bowl add washed, dried and sliced peppers, and grated carrots on a medium mesh, diced or cut into strips onions, frozen green beans, drained and rinsed corn, as well as green peas.
  2. C​ook pearl barley and buckwheat groats according to instruction on the box.
  3. Heat the oil over medium heat and fry the onion until golden brown, then add all vegetables from the bowl. Cook for 20 minutes. When both groats are ready, strain them and add them to the frying pan. Mix everything well, add seasonings mix everything one more time and serve warm.

Recipe Notes

Y​ou can use dill or parsley to decoration
