Quick & Easy Work-Night Dinner: Chicken & Udon Noodles!
A quick dinner after a long day of work
Ughhhhh! I just worked 12 long hours in some of the most horrible weather yet this year, and the last thing I wanted to do was to go home and prepare dinner. Luckily, we had planned a quick and easy meal, and dinner was ready in roughly 15 minutes!
I hate to say it, but I cheated big time here. At the local Costco warehouse-store, we discovered nearly instant udon noodle kits; containing four servings per kit. We sampled the noodles, which were packed with flavor and had a nice chewy and soft texture, and ended up buying two packages for work-week meal nights. To cook up the noodles, one just needs to throw all of the ingredients into a pan with a little water and oil, and fry them up in a couple of minutes!

I have to have a protein with my meals or, for some reason, I get a little cranky. The night before preparing this dinner, I butterflied a large chicken breast and marinated it in a combinations of ginger, crushed red pepper, garlic, soy sauce, and Golden Mountain Seasoning Sauce. The chicken marinated for about 24 hours before I got home from work and fired up the grill. All I needed to do was grill the chicken until it hit an internal temperature of 160°F, let it rest for a minute, and slice it to serve over a bowl of noodles.

For a quick and easy work-night meal, it was great! The noodles have a fun and enjoyable texture, and are in a nicely flavored sauce. The chicken came out perfect! It was juicy and packed a lot of umami flavor, due to the Golden Mountain Seasoning Sauce. I think it's important to mention here that the Golden Mountain Seasoning Sauce DOES NOT use MSG as a flavor enhancer, yet is loaded with a lot of awesome umami! Another great thing about this meal is that once package of noodles contains four individual servings, as does one large chicken breast. That means we can easily get two nights of meals on the cheap and with very little time invested.
