Quick vegetable bake recipe: use up those leftovers
In the spirit of using up what I had, I created this little supper or side dish.
I thought this dish was worth a mention. I actually served it as a side dish with some tuna and fresh vegetables, but equally I can see myself making it again and having it as a supper in front of the TV on a winter's night.
You can use any vegetables you have around. The great thing about this is that you can make it with small amounts of things you have left over, to save anything going to waste!
Pre-heat the oven to 180 degrees.
Fry one clove of chopped garlic and an onion in a tablespoon of butter and a tablespoon of olive oil until lightly browned. Add a chopped leek, or some broccoli or other greens, or even carrots.
When browned, pour in a small tub of cream and top up with milk.
Season with salt and pepper and simmer for five minutes.
Peel and slice potatoes and lay them on the bottom of a casserole dish, then pour on the vegetable mix.
Cover and bake for twenty minutes or until the potato is cooked through. Take off the lid to brown and cook for another five minutes before you serve.
If you like, you can sprinkle with grated cheese at this stage.
