A while ago, my Grandma made her famous Kohlrouladen. While making it, you often get some cabbage leftover. Mostly the leaves that are too small to wrap anything inside them.

We Germans have come up with a great way to deal with that leftover cabbage.

Kohlsuppe.

Kohlsuppe.

We chop it into bits, cook it into a soup with vegetable stock. And if desired, add some meat too. Then we have Kohlsuppe.

Contrary to Kohlrouladen, Kohlsuppe should be easy to make without any meat in it. However, my grandma usually uses loads of meat, so it takes a bit longer.

*As with Kohlrouladen and Golabki, Kohlsuppe also has its Polish equivalent called Kapuśniak.

  • Slightly unrelated : There is a cult classic French film "La Soupe aux Choux" (which means "The Cabbage Soup" or "Die Kohlsuppe") from 1981 : www.youtube.com/watch?v=B4KDBDQIkGI

While it's not my preferred kind of soup, it can be quite good.
