This year, I decided I wanted to try something new for Christmas and as I'm a huge fan of Raffaellos I started wondering about a Raffaello Cheesecake...

Recipe

I beggined searching for recipes online and I found one really interesting. But it had lemon in it and definetely no condensed milk... So, I kind of followed the recipe, but cooked it up a little bit as I always do! I fail almost every time when it comes to strickly follow a recipe... My bad.

Ingredients

I started by putting toghether all the ingredients I was going to use.

And they are: Coconut Shavings, Raffaellos, Powdered Almonds, White Chocolate, Shortcake Cookies, Mascarpone Cheese, Coconut Cream, Condensed Milk, Cream, Gelatin Sheets and also butter (not in the picture, because I forgot).

1st Step

First, I crumbled all the Cookies. Then added the Powdered Almonds to the crumbled cookies and also some Coconut Shavings. And mixed it all toghether.

2nd Step

Secondly, I've softened the butter and added it to the cookies mixture. I've mixed it all very well until it became almost like a dough which I used to cover the bottom of the cheesecake countainer. This was fun to do!

3rd Step

Once I had covered the bottom of the cheesecake countainer, I putted it in the fridge for a bit while I was doing the actual cheesecake!

4rd Step

Now it was time for some White Chocolate melting! Yummi.

5th Step

After I had the melted chocolate, I added the Mascarpone to it and mixed it all very well.

Then, I added the Coconut Cream and again mixed it all very well.

At the end, I started to put just half a can of Condensed Milk but I couldn't help myself and ended up using the entire can! If it was a sweet I was making, it was going to be SWEET!

Time to whip the Cream!

Now it was time to involve the chocolate mixture with the whipped cream very well and then add some coconut shavings to give it an extra coconut flavour and texture!

8th Step

Don't forget the gelatin sheets. Very important. I only used 2, but I think it would be better if I have used all the 5 that came in the package...

You'll see why in a moment...

9th Step

And finally, I putted the cheesecake where it belonged. In the fridge.

And there it was...

Ready to be there all afternoon...

So I could decorate it and take it for dinner at my aunt's house!

Ok! This was a little bit of a failure...

Don't get me wrong, the flavour was amazing and everyone loved it! But it simply wasn't hard enough...

The electricity had to be cutted off during the afternoon and so the cheesecake only was 2 hours in my fridge. I was very sad with this because I wanted to bring a good cheesecake for dinner.

When I got there, I immediatly putted it in the freezer and it was there for about 2/3 hours but it still wasn't enough. It was hard on the outside but in the middle it was still very soft. But it was time for dessert so I managed to unmold it and decorate it with the rest of the coconut shavings and of course the main attraction: the RAFFAELOS!

My family called this the Cheesecake Mousse. But what matters is the flavour, right? And it was absolutely D-E-L-I-C-I-O-U-S.

Of course, if you want to give it a try, please put the 5 gelatin sheets (I'm not sure how it would go with only 2 since the fridge trip was not the best one, but now that I think of it I think 2 was very, very little)

And of course, make sure it stays in the fridge for at least 6 hours!

Raffaello Cheesecake

A great option for coconut lovers.

Ingredients

  • 200gr Shortcake Cookies
  • 100/150gr Powdered Almonds
  • 400gr Coconut Shavings
  • 100gr butter
  • 200gr White Chocolate
  • 400ml Cream
  • 1 can of Condensed Milk
  • 1 can of Coconut Cream
  • 300gr Mascarpone
  • 5 Gelatine Sheets
  • 1 package of Raffaello

Instructions

The Crust

  1. Crumble the Shortcake Cookies
  2. Add the Powdered Almonds
  3. Add the Coconut Shavings (something like 5/6 tbsp) and mix very well
  4. Melt the butter
  5. Add the melted butter to the mixture
  6. Cover the bottom of the cheesecake countainer with this mixture
  7. Put it in the fridge while you make the cheesecake

The Cheesecake

  1. Melt the Chocolate in a water bath
  2. Add the Mascarpone to the chocolate and mix very well
  3. Then add the Coconut cream and mix, mix
  4. Then add the Condensed Milk and mix, mix, mix.
  5. Whip the cream
  6. Involve the whipped Cream with the chocolate mixture
  7. Add half of the Coconut Shavings you have by now and gently MIX
  8. Then add the Gelatine Sheets previously soaked and melted - and gently mix again
  9. Put this mixture in the cheesecake countainer and leave it in the fridge for at least 6 hours
  10. Unmold it and decorate it with the rest of the Coconut Shavings and the Raffaellos, of course
  11. ENJOY!

Recipe Notes

This was a fail because of the unexpected electricity failure, but still it was very good. I hope if you are able to make it, it goes way better than this one went! The flavour is worth all the work :D

  • I would like to try this but add cream cheese instead of the gelatin, if the ratio is good then it would be quite firm and very creamy, otherwise your effort looked amazing! It's always good to know that even if it wasn't as firm as you wanted it still tasted amazing and that's all that matters, great job, well done! 😁❤️
