Recipe: Vegan coronation chickpea ciabatta
A tried and tested recipe
A healthy alternative to a classic sandwich filling
We have been working on this recipe for the last year to perfect it to the right flavour to complement the chickpea bite. This recipe would also make a fantastic pasta salad, with or without the chickpeas. Give it a try!
4 tbsp of vegan mayo
1/2 a lemon juiced
1 tsp mild curry powder
1/2 tsp turmeric
2 tbsp of sultanas
1 tbsp mango chutney
6 dried apricots chopped
1/2 red onion diced small
1 can of chickpeas
1/2 tsp chopped fresh coriander
Grab a bowl and place the mayo, lemon juice, turmeric, curry powder and mango chutney in. Stir well. Chop the onion up and add into the bowl along with the sultanas and coriander.
Drain and add in the chickpeas and stir well.
We served ours up along with carrot, cucumber, watercress in a freshly cooked warm Ciabatta.
