Recipe: Discover how to bake a Tarte Tatin for those autumn days

I posted a few pictures of a first attempt of this a week ago, so here is the recipe!

I had longed dreamed of baking this dessert that my grandfather made when I was a kid. I finally found some inspiration and courage one quiet Sunday. It was a first time for me, like many things I show you on FoodTribe. It wasn't perfect but it really looks like one of the best things I've baked in my life! I had apple, sugar and flour so I felt ready, and pretty confident, to show you the recipe. Here we go for one of my sweetest adventures!

Tarte Tatin

A very caramelized and sweet dessert for the cold days

  • 175g of flour
  • 75g of sugar
  • A pinch of salt
  • 100g of butter
  • 5 apples
  • Cinnamon powder
  • Lemon juice
  • A glass of cold water
  • Almonds (powder or slices)


For the shortcrust pastry

  1. Add the flour, the pinch of salt and 75g of butter together in a bowl.
  2. Mix all the ingredients to obtain a light yellow fine flour.
  3. Add the water and mix again with a wooden spoon or your floured hands.
  4. Add some flour if the pastry is not enough dry and put in an another small bowl in your fridge for 30min.

For the apple and the caramel sauce

  1. Peel and cut your apples in quarters and put them in a bowl.
  2. Add cinnamon powder and lemon juice on our apple, mix and leave them in a corner for 15min/20min.
  3. Pour your sugar in three time in a fried pan. It must turn into caramel by melting thanks with the heat each time. Make again the operation once the first batch of caramel is done.
  4. Add the rest of your butter (25g) in your caramel and melt it to have sauce.
  5. Add your apples in the hot pan and mix them with the caramel sauce and the rest of the marinade made of the lemon juice and the cinnamon powder.
  6. Cook them between 30min and 45 min. Your apples have not to burn but being only golden.

For the 'reverse' or 'real' tarte Tatin

  1. For the 'reverse' tarte Tatin: Spread out your shortcrust pastry with flour in a pie pan firstly and add your apples, their caramel sauce and some almonds on top of the pie.
  2. For the 'real' tarte Tatin: If you feel more confident, you can add your apples, the caramel sauce and the almonds firstly and then spreading your shortcrust pastry.
  3. Put your tarte Tatin in the oven for 30min to 45min.
  4. For the 'real' tarte Tatin: Turn back your tart carefully from the pie pan in a plate before the caramel sauce is cooling. This is the prettiest dangerous step of the recipe.

Recipe Notes

Once your tarte Tatin is ready, you can eat it with vanilla ice cream or any flavour of your choice.
