Summertime always brings an abundance of herbs to be used and stored in the kitchen. For me summer is a time where I fight with the masses of mint that grows wild in our garden, but it's a love hate relationship!
As much as I hate how it tried to take over my flower border, I also love it being there for the smell and for the use in the kitchen.
So each year I try to think up new ways to incorporate as much mint in as I can. This was a bit of a mad idea but I have to say as mad as it seems, it's actually so good! It's perfect over hot new potatoes, on pizzas, tarts, salads you name it! Give it a try and let us know what you think?
A summery twist on a classic
Ingredients
- 1 cup of fresh mint leaves
- 1/2 cup of fresh parsley
- 1/4 cup of olive oil
- Zest of 1 lemon
- 1/2 lemon juice
- 1 clove of garlic
- 30g pine nuts
- 6 ice cubes and a bowl of cold water
- bowl of boiling hot water
Instructions
- Place the mint leaves and parsley into boiling hot water for a minute then into a bowl of cold water with ice cubes in.
- Place the leaves into a blender along with the garlic, pine nuts, olive oil, zest and lemon juice and blitz until all nuts and garlic is blended.
- Serve and enjoy!
Recipe Notes
Placing the herbs into boiling hot water and then into ice cold helps retain the vibrant colours.
