Recipe: Golden Rösti Cakes for the #FTBIRTHDAY

Jane made the cake, Doug made the steak - it's time for some taters!

FoodTribe is turning two and while there have been various meat and sweet potluck entries, the classic potato dishes seems to be absent at the moment. And what better way to capitalise on that than some easy to prepare, homemade Rösti cakes. I forgot - they are genuinely delicious as well.

Ingredients

1 kg of potatoes

1 small to medium onion bulb

200 grams of white brined cheese or feta cheese (the harder - the better)

3 medium-sized eggs

Powdered black pepper

Powdered red pepper

Dried summer savory

Finely chopped parsley

Salt

3 tablespoons of breadcrumbs for batter coating

3 tablespoons of plain white flour

Cooking oil

Sorry, I forgot to take a photo of all the ingredients this time around, so you have to take my word for it. Or you have to live with this picture of boiled potatoes. 😅

Preparation

Peel and boil the potatoes, then let them sit in cold water for at least 30 minutes, until they cool down. After that you have to ground them, but not too thin. When you're done, you have to add a single egg on-top, the white cheese (or feta), either grounded or if it's too soft, you can crumble it by hand, as finely as possible. Then grind the onion bulb, add just a touch of black pepper, red pepper, summer savory, parsley and salt.

Mix the whole thing well, until it becomes a homogeneous mixture. Now it's time to form some Rösti Cakes - get some cooking oil on your hands (or gloves) and start forming the cakes as you fancy. I personally would form them like chubby meatballs, rather than skinny pancakes, but it's a matter of personal preference. Easy does it - don't squeeze too much. For them to retain the shape, you have to mix the breadcrumbs and the flour, then dip the cakes on both sides. The end result should look like this:

I've made two trays (14 Rösti cakes), but one photo is sufficient. Now put those in the fridge for 30 minutes to cool down additionally. Just before it's time to get them out, break the other two eggs in a small bowl and stir them. Then put some cooking oil in a pan and heat it up. Get the cakes out of the fridge, dip them in the eggs and fry them in the pan until they change colour. Just above golden is what you're looking for. Lastly - when you get them out of the pan, use kitchen paper for the Rösti Cakes to sit, so the excess oils can be absorbed. The end result should look (roughly) like this:
