Recipe: Green Tomato Cake – a bit like a carrot cake, but not
One of the best ways to use up green tomatoes
This is a recipe you just have to try. We explored options last summer as we had loads of green tomatoes left over from our crop before the frost set in, and we thought, 'hang on a minute, why not turn this into cake?' Best decision yet! It's inspired by carrot cake, but has the texture of a fruit cake. Give it a go and let us know what you think.

Ingredients
- 1 cup of vegan butter
- 3 flax eggs
- 1/2 cup of soya milk
- 2 1/2 cups of sugar
- 3 cups of plain flour
- 1 1/4 TSP cinnamon
- 1 TSP baking powder
- 1/2 TSP of nutmeg
- 2 1/2 cups of diced green tomatoes
- 1 cup of raisins
- 1 cup of chopped walnuts
- 1/4 cup of vegan butter melted
- 1 cup of icing sugar
Instructions
- Start by making your flax egg in a small bowl and leave to one side. Preheat oven at 180 degrees gas mark 4.
- Place the sugar and butter into a bowl and cream together with an electric whisk. Add in soya milk, flax eggs and whisk until combined.
- In a separate bowl add flour, baking powder, cinnamon and nutmeg. Then sieve into the wet ingredients bit by bit, whisk again to get as much air in as possible. Then fold in the tomatoes, walnuts and raisins.
- Empty into a greased lined tin and place into the oven. Bake for 35-40 mins until a cocktail stick comes out clean. Take out and leave to cool.
- To make the icing, place the butter into a pan and heat up until really bubbling away approx. 3 mins on a high heat. Take off the heat and pour into your icing sugar and mix around. Add water if needed.
