Recipe: How to make a vegan millet and vegetable pie

Watching James May's Oh Cook!, we were inspired to make our own vegan pie. Perfect comfort meal and a fab week night meal which you can prepare in advance and heat up when needed, served with some roasted root vegetables. I started off by cutting an onion, 2 large carrots, 2 sticks of celery, 1/4 cauliflower chopped and 1/4 of a broccoli. I added the onions and 2 cloves of garlic to a saucepan and slowly heated in 1 tbsp olive oil until soft. then i added the rest of the veg and added 1 vegetable stock pot along with 2 cups of water, 1/2 cup of millet. i simmered until the veg was almost cooked through then added 1/2 cup of frozen peas. placed into a dish and topped with vegan puff pastry and washed with soya milk. Placed into a pre heated oven for 20 -25 mins until golden.
