Recipe: Mixed salad with figs and Parmigiano Reggiano
Salads don't have to be boring, and certainly won't be with this Parmigiano Reggiano and fig number!
Everybody brings out a bowl of leaves at a barbecue, more so because it's kind of become a social norm rather than people actually having the intention to eat it. But simple salads don't have to be boring!
This fruity and fragrant fig and Parmigiano Reggiano salad is so delicious, it could be a main event. The saltiness of the Parmigiano Reggiano and the sweet earthiness of the figs is just a match made in heaven. Very European, very fashionable, very much should be the salad you make at your next barbecue.
- 250g mixed greens
- 4 Datterino tomatoes
- 4 yellow tomatoes
- 4 figs
- 200g slivers of Parmigiano Reggiano cheese
- 40g pumpkin seeds
- Extra virgin olive oil as needed
- Salt to taste
- Wash the mixed greens. Cut the tomatoes into segments. Peel the figs and cut them into four segments. Put all the ingredients in a large bowl and dress with oil and salt. Finish the dish with slivers of Parmigiano Reggiano and pumpkin seeds.
