Recipe: Vegan cherry tiramisu for the #FTBirthday potluck

This week is a crazy week for us as we are busy getting prepped for our youngest's 3rd birthday. But in all the chaos of making cakes, I managed to create this for the adults. I have been wanting to adapt the classic tiramisu for a while now, but I have been so busy it kind of slipped! We were very lucky to have been given a jar of cherries by @starlinocherries all the way from Italy, so to honour the Italian cherries, there's no better way than to make a tiramisu. The cherries are just stunning, they are really boozy and sweet. Perfect for cocktails and desserts.
sweet, boozy and creamy
Ingredients
- 30g vegan butter
- 60g caster sugar
- 100g self raising flour
- 1/4 tsp bicarb of soda
- 100mls milk alternative
- 2 tsp vanilla extract
- 3 1/2 tsp of camp
- 1 tbsp agave nectar
- 1 cup of boiling water
- 250mls vegan double cream we used @elmlea plant double
- 2 spoons of granulated sugar
- 1/4 jar of cherries (can be fresh or in syrups the best)
- dark chocolate to top
Instructions
Sponge
- In a bowl place the vegan butter and caster sugar and cream together. Add in the milk alternative and 1 tsp of vanilla extract. mix well
- Next sift in the flour and bicarb into the wet mix and stir well. Prep a brownie tin or a tin with large surface area. once prepped pour the batter on top and place into the oven until a skewer comes out clean approx. 20 mins depending on the surface area size.
- Let the cake cool down to one side. New make your coffee mix as you need to let this cool before soaking the sponge otherwise it will just break up. Place the Camp coffee liquid into a cup and add the agave and hot water. Stir well and leave to one side. You can use a shot of expresso coffee or instant coffee too just enough to make 1 cup of liquid.
- Next make the cream, place the cream into a bowl with the granulated sugar and 1 tsp of vanilla extract. Whisk until firm peeks are formed.
- Now to construct. And this is the part you can make your own rules and layers. I started by dipping the sponge into the coffee mix and using that as a base. Then added some cream, cherries and syrup, more cream then another layer of sponge before topping with cream, chocolate and cherries.

What kind of booze was the cherries soaked in?
The cherries are left to mature for 15 days in their own Marasaca juice. Which makes them very sweet but boozy in taste. They haven’t been soaked in alcohol but just taste like they have 😋
