Everyone makes banana loaves, but how about a vegan strawberry and banana loaf? Here's the recipe!
100g caster sugar
1 TSP baking powder
300g self raising flour
150mls sunflower oil
40mls soya milk
150g fresh strawberries roughly chopped
In a bowl mash the 2 bananas, add the sugar, oil and soya milk and mix.
Sieve in the half of the flour and baking powder and mix it into a batter then add the strawberries in gently and then the remaining flour and baking powder. It should form into a dough like consistency.
Place into a loaf tin – mine is 25cm X 15cm but I reckon you could use smaller to get more height.
Cook for 35 mins until a knife comes out clean. Leave to cool down. I used some strawberry syrup I made from boiling a couple of strawberries with some granulated sugar while the loaf was cooking.
I then drizzled some over the top of the loaf when it came out of the oven and the rest I made the icing for the top with.
