  • Going to give this a go converting to sourdough as I have starter.

    Couple of questions please if I can ask.

    What happens to the other quarter oil/water mix?

    Where does the grated mozzarella go in?

  • Well, I've had a go. Let's see how it tastes after cooling I had to give it another 5 minutes but think it might still be slightly under baked.

    I reduced the water and flour by 75g each and used 150g of sourdough starter instead of the yeast. Then gave it 3 stretch and folds and an overnight prove.

    The test will be when stuffed with Turkey, brisket pastrami, cheese and mayo :)

      I forgot about saving the quarter oil/water and added it all in. It was a little sticky to work with but I used a sheet of parchment folded into a couche on a baking sheet to try and control...
