Subway has been releasing recipes for all of our favourite subs – and now it's showing us how to make amazing Italian herbs and cheese bread, too. Here's how to indulge in a little something from one of the high street's most loved takeaways...

Italian herbs and cheese bread

It's the perfect basis for any good sub

Serves4

Ingredients

  • 500g strong white bread flour
  • 10g (or 1 sachet) quick action yeast
  • 20g caster sugar
  • 8g salt
  • 80ml olive oil
  • 320ml lukewarm water
  • 1 egg
  • 1 tbsp dried Italian herbs
  • 1 tbsp Parmesan
  • 1/2 tsp garlic granules
  • 1/2 tsp onion powder
  • 30g grated mozzarella

Instructions

  1. Preheat the oven to 180C (fan).
  2. Add the flour to a large bowl. Next, add the salt and sugar to one end of the bowl the yeast at the other (they need to be separate for now, or you'll murder the yeast).
  3. Separately, combine the oil and water with a whisk.
  4. Add 3/4 of this to the dry ingredients and mix evenly, before mixing in the rest.
  5. Tip the mixture onto a lightly floured surface and knead till smooth and elastic. It's going to take a while, so gather your strength beforehand. 10 minutes should do it.
  6. Lightly oil the bowl the mix came from and put the kneaded dough back in. Cover with a damp towel and leave to prove.
  7. Leave it alone till it has doubled in size – go and make a cuppa.
  8. Once it has doubled, tip it onto a lightly floured surface and divide it evenly into 4 pieces.
  9. Roll them into long sub-like loaves and place them on a baking tray. They should be about a foot long (obviously) and at least 5 cm apart.
  10. Cover with cling film and leave to prove for an hour. Time to make the topping.
  11. Put the mixed herbs, dried Parmesan, garlic granules and onion powder in a bowl with the salt. Done.
  12. When the bread has been proving for an hour, you can do one of two things: brush it with milk and leave it to create a plain loaf, or brush it with whisked egg and sprinkle with your topping.
  13. Bake in your preheated oven for 25 minutes until golden and resembling something you might get at Subway. Take out and let them cool.
