I decided to get experimental last night. Oh my is the right thought to have for that. I decided to have my chicken breast cook with my rice. I used my instant pot for this. I started out sautéing some onions and garlic, deglazed the pan with some chicken broth that I am using to cook the rice with. In goes my already rinsed rice, stir to even out, and I add my sliced up marinated chicken breast. Sealed up the instant pot, put it on the rice cooker option and pressed start. I noticed it did not come up to pressure by a certain time that it normally would. So I canceled it and opened it up to check to see what was going on. Turns out it was pretty much cooked already so I tossed in some frozen peas and carrots. I topped mine off with some green onion and homemade chili oil. It wasn't too bad. I would try to fix it a little differently next time.

Whites with lees contact tend to pair well with rice and starchy dishes. This Verdejo would have flattered the ingredients around your rice.
