Rice salad, an Italian summer recipe
Insalata di riso, a summer dish that's fresh and quick to prepare
Rice salad is a typical summer Italian dish. It is cold rice seasoned with different ingredients mixed in.
Any rice can be used, but parboiled long grain rice is recommended.
The ingredients for the seasoning (cut into small pieces) can be tuna, cheese, vegetables (cooked, raw or pickled), meat (e.g. würstel or ham), olives, boiled eggs... the list goes on.
In Italy there are commercially available preparations with ready-made ingredients preserved in oil or pickle.
For the preparation of the rice salad, it is recommended to pass the rice under cold water once drained, to prevent it from becoming too sticky.
My rice salad
In the dish in the photo I've mixed in a large can of tuna, cubes of cheese, olives, spring onions and würstel.
The würstel were cooked in a pan and, as you can see, the final pieces were transformed into 'baby octopuses'.
Rice salad should be served cold, so after seasoning it, it is best to put it in the fridge for a few hours. Once on the plate, you can add mayonnaise. Don't worry: you're not violating any Italian food rule. Mayo is good on rice salad!
It is easy, fast and tasty. Excellent for hot days.
