Yes, Rome is in lockdown again, I'm at home with nothing to do...so I thought: " hey! Let's try a new recipe and share it with the FoodTribe community!"
This is a really quick recipe but, trust me, it's good!
You'll need:
- Veggie stock
- Risotto Rice
- White wine
- Lemons
- Pecorino cheese
- Olive oil, salt and black pepper
How?
- Boil the rice in half water half veggie stock until it's cooked
- Sautè the rice in a pan with olive oil and deglaze with white wine
- Add grated pecorino cheese and lemon zest
- Season with salt and pepper
Aaand lunch is ready!

Looks really delicious. Lemon or orange zest always adds so much of freshness to everything. I also like to dry orange peel and save it for stews and casseroles. I can't stand commercial varieties because of added preserves and, would you believe, some has added sugar! On another, completely different note, my wife and I are so missing Rome's "fast food", porchetta vans/stands! I suppose, there aren't many of them, if any, during lockdown.
I never tried to add peels for stews! I will definitely try it!! Also, sadly no, there are no “zozzoni” (that’s what we call them!😁) available during lockdown...
That is very sad. Some of them are quite a characters! They are like taxi drivers, always ready to share their opinion about everything! We so miss it all!
