Easy tomato pasta sauce

This super simple and budget-friendly tomato pasta sauce uses mostly store cupboard ingredients



  • 1 tin of diced tomatoes
  • 1 onion, sliced
  • 3 cloves of garlic, crushed
  • Balsamic vinegar
  • Oregano and/or Italian seasoning
  • Tomato paste / concentrate
  • 2 cups of fried or roasted vegetable (I use fried mushrooms, but zucchini, squash or eggplant would also work well)
  • Stock cube dissolved in half a cup of hot water
  • Cheese for topping


  1. Fry the onion and garlic in oil over a low heat for about 5 minutes. Sprinkle with oregano and/or Italian seasoning herbs.
  2. Add the stock water, tin of tomatoes, splash of balsamic vinegar and squeeze of tomato paste. Cook on a low heat for 10 minutes.
  3. Blend the sauce in a blender or food processor until smooth. Add pepper and salt if needed (the stock makes it salty).
  4. Add the cooked vegetables to the sauce and then eat with cooked pasta, topped with cheese and a drizzle of olive oil.

    Reminds me of rainy Sunday evenings at home in Brisbane in the late '80s , trying to make dinner out of next to nothing.

    Zucchinis and indeed all veges grow so easily in Queensland.
