Ingredients:
1/2 tin of chickpeas,
1 onion (skin on)
1 sweet potato (skin on)
1 clove of garlic (optional)
1 teaspoon turmeric
Juice of 1/2 lemon
Olive oil (optional)
Method:
Roast your onion and sweet potato in the oven at 180 degrees c for 35-40 minutes or until soft. Take out of oven and let cool.
Scrape out the sweet potato and onion from their skins and add to a blender. Blend all the other ingredients together and season. Add a little olive oil (or water) if needed to get desired consistency.

Try roasting a whole garlic too and then squashing out the garlic puree into the hummus. Its lovely. You will only need 1 clove and you can use the rest of the garlic for other things. You can freeze it in ice cube trays with a little water. Garlic is not ideal for this way of living but its nice to have as a treat every now and then!
