How to make your evenings warm, spicy and cosy with this simple recipe for sausage, and sweet potato mash and spicy onion gravy.
WHAT YOU WILL NEED
Cooking time is about 30 min’s and you will need for two people the following
4 to 6 Cumberland sausages
One medium onion
Peppers mixed either fresh or frozen, a small handful
Salt and pepper
Chilly flakes a sprinkle
Garlic paste of granules a sprinkle
2 Oxo cubs
Bisto gravy granules or cornflour
2 tablespoons of olive oil
A dash of red wine if you have some handy
Peas or a mixture, why not try green beans or even Brussels sprouts mix
3 to 4 large sweet potatoes or a mix of normal potatoes and sweet potatoes
WHAT TO DO
Start by scraping the skins off the potatoes and place into hot water and cook until soft, drain and then mash adding a little milk and margarine or butter, mash and season with garlic, fresh or use garlic paste or granules, salt, and pepper. Once done leave for a few minutes while the other part of the meal is being made ready. When needed reheat with a little knob of butter or margarine in the microwave.
Fry the sausages until cooked.
Once the onions and peppers are chopped place in a frying pan and fry until browned and softened.
Steam or boil your vegetables.
Once your sausages, onions, and peppers are fried, seasoned with salt, pepper and chilly flakes they are ready for the gravy.
Simple Gravy, cook in the same pan as the sausages onions and peppers, just add two devolved Oxo cubes into about 400 mils or 3/4 of a pint of water then add to the pan.
Add to the same pan and simmer for a few minutes, then add to the gravy mixture. Bisto or cornflour, keep stirring so you have no lumps, simmer for a few minutes.
Reheat the mash in the microwave with a little knob of butter or margarine, drain your vegetable and you are done.
Once eaten you won't be able to move after you've eaten this, so staying in won't be an issue, so enjoy the rest of the night on the sofa watching a good movie.
