S​eabass with Lemon caper sauce

- Beautifull crisp skin.

Thought i'd try something new, i started by making a sauce blending garlic, parsley, basil, coriander, a little green chilli, extra-virgin olive oil, sea salt, capers, lemon zest and juice .

I got some tender stem broccoli, a couple of potatoes and sliced them into disks, mixed them up with olive oil, fresh thyme, seasoned with salt and pepper and popped them in the oven to roast.

Then I got two fillets of sea bass and slashed the skin with a sharp knife a few times, drizzled them with olive oil, seasoned them and fried skin side down so the skin becomes nice and crisp. Flip them over for one minute to finish... Delicious!
