Homemade Kewpie Mayonnaise

Ingredients

  • 2 tablespoons rice vinegar
  • 1 tablespoon plus 1 teaspoon malt vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon MSG powder
  • 1/2 teaspoon Japanese mustard powder
  • 1/8 teaspoon hon-dashi powder (optional but needed for authentic flavour)
  • 1/8 teaspoon garlic powder
  • 2 large egg yolks
  • 1 cup vegetable oil

Instructions

New School Method

  1. In a small bowl, whisk together rice vinegar, malt vinegar, salt, MSG, mustard powder, hon-dashi powder, and garlic powder until hon-dashi is completely dissolved.
  2. Place vinegar mixture in the bowl of a food processor fitted with a steel blade along with the egg yolks. Pulse to combine.
  3. With the motor running, slowly drizzle in vegetable oil in a thin, steady stream.
  4. Transfer mayonnaise to an airtight container and store in refrigerator for up to two weeks.

Go Old School

  1. Optionally if you are a purist like me, follow the same steps, but use a medium size bowl, a whisk, and some old fashion elbow grease.

Recipe Notes

This is the minimum amount you can make at once, but I’m sure you will want to double it :) Can’t find Hon-Dashi powder, you can use any dashi stock, or make your own.

I have worked on this for a while, and have finally cracked the recipe as close as the real thing as possible.

After hours of testing, the secret to this recipe is the Hon-Dashi stock powder and powdered MSG. This is what truly makes this mayonnaise special, as MSG (Monosodium Glutamate) makes everything taste better, enhancing the Umami flavour.

MSG caught a bad rap back in the 80s with the whole asthma and allergies stuff all coming from a Doctor who caught a dodgy case of food poisoning… nowadays MSG is added to so many foods you have daily and would not even realise.
