Simple fried aubergine salad recipe
Aubergine keeps fresh for a surprisingly long time, so it's great to keep your diet fresh and healthy if you can't get out to the shops very often.
I cook fried aubergine in such a simple way. I don't bother with the salting and waiting and all the faff that involves.
I just slice it and fry it in olive oil. Although it soaks up a lot of oil, you will find that at a certain point of cooking it releases it again. So be patient and you will be rewarded.
After the aubergine is fried, I fry some chopped garlic, ginger and chill in the remaining oil in the pan. When they are browned, I take the pan off the heat and add a couple of tablespoons of vinegar and stir well.
I pour all this dressing over the aubergine and top with some fresh herbs or chopped onions.

That’s looks quite good
It looks good, but all I remember of aubergine is gagging and being told there would be no dessert unless I swallowed.
Have you tried frying it? It’s delish!! You can add salt, red chilly powered, and coriander powder on top of it once done.
