Simple kimchi and bacon fried rice recipe: use up those leftovers
Easy to make, great to eat
Cooked too much rice? It turns out rice left overnight is perfect for making fried rice. Personally, I even plan out my meals so I have enough leftover rice to fry. Here is my recipe for a super easy yet delicious meal.
Ingredients:
2 tbsp Bacon bits
2 tbsp Kimchi, finely chopped
2 tbsp Coriander, finely chopped
1 Egg
2 bowls Rice
½ tsp Salt
Coriander leaves, to serve
Instructions:
1. Cook the bacon bits in a pan over high heat. Stir fry until there is a savoury aroma. Set aside in a bowl for later use.
2. Cook the egg in a pan over medium heat. Quickly scramble it and set aside in a bowl.
3. Cook the kimchi over high heat. Stir fry until there is a savoury aroma. Add in the rest of the ingredients and stir to combine. Stir fry for about a minute.
4. Serve topped with some coriander leaves. Enjoy!
