It's time to embrace your inner Salt Bae and start cooking some big ribs. You might wanna keep your favourite salt cellar handy so you can work your magic when you're done, and you might wanna grab a beer and the traditional BBQ apron before you get started. To get into the right spirit, y' know.
You'll want to be slow-cooking your prime rib at just 107°C for this recipe. The Masterbuilt Gravity Series barbecues make doing so easy thanks to the digital control panel that allows you to precisely set the temperature. A juicy, meaty, beefy (no pun intended) prime rib to shock your guests with your BBQ skills (we hope)
Ingredients
- 1 (18-20 lb) whole long bone-in prime rib
- Your favourite (sweet) BBQ rub
- Kosher salt and pepper
- 2 cups Mayo
- 2 tablespoons red wine vinegar
- 2 tsp fresh minced garlic
- Classic Southern comeback sauce... ingredients below
- 1/2 tsp of mayo, ketchup, Worcestershire sauce, Dijon mustard, hot sauce, smoked paprika, garlic powder, fresh black pepper and salt (for the Comeback sauce)
Instructions
- Season your prime rib with kosher salt, black pepper and your favourite sweet BBQ rub.
- Remove slides from the Masterbuilt Gravity Series grill (the grates should be 'smoke side up'), pour the charcoal in and turn it on. Set the temperature to 107°C/225˚F. (Recommended wood flavours: apple, pecan or hickory).
- Smoke your prime rib at 107°C for 4 hours and/or until internal temperature is 49°C/120-125˚F – whichever occurs first.
- Once internal temperature reaches the desired temperature, remove the prime rib off the grill and allow it to rest (unwrapped) for 30 minutes.
- Prepare the Comeback sauce and put it in the fridge.
- Slice your prime rib into 7 Tomahawk steaks and season both sides of each steak.
- Set the grill temperature to 260-320°C/500-600˚F and place each steak directly on the grill for 2-3 minutes per side.
- Remove the steaks from the grill and serve with chilled Comeback Sauce.
