Soup for the Soul: Arroz Caldo

This here is Arroz Caldo which is basically the Filipino version of congee usually made with chicken, however, you can use your choice of protein. It's the perfect food for those very very cold days though this is also great for when you're under the weather. I made this with my Instant Pot and used a recipe from the Filipino Instant Pot Cookbook I had talked about before. It only has a few ingredients and is super super easy to make, even if you don't have an Instant Pot. Fish sauce is listed as an ingredient but if you're allergic, you can skip it. You can always add more salt or even some soy sauce to taste per serving. I do however recommend adding lemon juice. So so good! If you do end up cooking this, I hope you'll enjoy it as much as I did!
