Sous vide BBQ chicken LOADED baked potato recipe

Sometimes, after coming home from a long day of work, I really don't feel like putting much effort into putting together a dinner. This meal proved to be pretty easy, having prepared the chicken on a Sunday evening.

I started by cooking chicken breast using the sous vide method. I seasoned the chicken breast with garlic salt, fresh ground pepper, and then poured a bunch of BBQ sauce into the bag before it was vacuum sealed. I let it go for about 1.5 hours at 165°F, and it turned out super tender and very easy to shred with two forks.

The next day, dinner prep was pretty quick and easy. My wife tossed two potatoes in the microwave and cooked them until they were fork tender. Then, the layering began! I started by melting a healthy dose of cheddar on my potato, then I prepared some bacon in the microwave.

While the bacon was cooking in the microwave, I mixed in some more BBQ sauce with the helping of shredded chicken, and then layered that on top of my cheesy potato. On top of that, a nice helping of Fire Roasted Poblano Ranch dressing was applied.

Once the bacon had cooled enough to handle, I grabbed some kitchen shears and cut up my five slices (indulgent!) into large "bacon bits". I covered my plate in bacon! And with that, my creation was complete!

My dinner was VERY good! The baked potato was loaded with complimentary flavors; they went so well together! The melty cheddar had a nice sharpness to it; cheese is good! The chicken had a slight peppery taste from the fresh ground pepper, and was very moist. The BBQ sauce mixed in with this had a nice tart flavor, with just enough sweetness. But it really shined with the slight beery flavor that poked through. The fire roasted poblano ranch dressing had a touch of heat, and went nicely against the BBQ sauce. And of course the bacon went with it all!

    • A smoked chicken would have taken it up a notch. I understand, sometimes you do what you have to do. I would still definitely eat this.
