Spectacular Lunch: Korean Pork Belly & Grits!

I brought my lunch to work today, and I was actually looking forward to eating it, but my good friend and coworker Josh convinced me to hop in the truck and head to 441 South BBQ to grab their special of the day for lunch. And damn, I tell you what; I'm glad I did!

First a quick word on Four 41 South BBQ. I've written about them before, and I tell you what - they have some great 'Que. But where I think they shine is with their specials. When you see their specials, you can really see their creative side breaking through. Their specials are fun, and you can tell the creators are having fun in the kitchen. And more importantly, the specials make for a phenomenal meal! Here are some that I've written about in the past:

Today's lunch special was Korean Pork Belly & Grits. Oh. My. Lawd. Simple in execution, but phenomenal and complex in flavor! The base was one of my favorite sides from Four 41 South BBQ; their pimento cheese grits. And I have to tell you, my New Jersey raised, yankee ass is not a fan of grits AT ALL. But I love Four 41's pimento cheese grits and they are one of my go-to sides when I order 'Que from them.

They took these awesome grits and top them with pork belly burnt ends done in a Korean style BBQ sauce. Pure. F@%*ing. Umami. Fabulous in flavor and ultra tender, these generous morsels of meat where, "punch my momma in the face for more" good! Yes, I think I would. Sorry mom!

And then a simple little touch really added another level of flavor to the whole dish; chopped green onion. Such a simple little additional garnish and it elevated the layers of flavor. The dish is just so good! You get a little acid from the pimento cheese in the grits. You get that signature sweetness from the Korean BBQ sauce. You get that awesome umami from the tender morsels of pork belly burnt ends. And then you get that bite from the onion to round it all out. It's just absolutely beautiful!

  • OMG, John! That looks absolutely amazing! We need to get you on the grits train, though! Good quality grits (seldom available at most grocery stores) are a thing of beauty! Try some Weisenberger Mills. Now, I might have to take a trip to GA!
