I lover mojo verde!!! in a blender i add a large handful of coriander, a clove of pealed garlic, a pinch of cumin seeds, salt, wizzed it up then added the wet stuff - a good glug of olive oil and a splash of sherry vinegar and wizzed again.
I chopped a baking potato into wedges and tossed in the fat from roast chicken, then added some cumin, sweet smoked paprika and oregano. Then put them in the oven for about 30 minutes. Never used chicken fat before but it worked really well.
Then cooked sirloin steak, I drizzled it with olive oil and seasoned with just salt (I add freshly cracked black pepper when its cooked so it doesn't burn) Get a skillet pan rocking hot and add the steak for 1 1/2 minutes each side, the last 30 seconds add a knob of butter to the pan, tilt the pan and spoon it over. Put the steak on a plate and let it rest for a couple of minutes whilst I dress rocket leaves in extra virgin olive oil, sherry vinegar, salt and black pepper, plate up and enjoy with a nice glass of red!
