Sticky Chinese chicken traybake

Joseph has been posting a few different recipes from www.bbcgoodfood.com. There was a certain recipe he was wanting me to do but lamb is not very available(or time) at the moment. This one I had already had on my to do list so here it is. I used boneless skinless chicken thighs for this and I marinated the chicken overnight just to help make it easier for me. I dumped everything out of the bag into a cast iron skillet, baked it for 30 minutes, basted it once, added the cashews and green onion, cooked it for 5 minutes longer. That's how the directions state to do it. I sliced it up and served it on Jasmine rice. Taking a bite of just chicken was very delicious but to eat it with rice was very lacking and dry. I would fix this again using one of two options: make double the marinade but set half aside to add during the last 10 minutes of cooking or to not serve with rice and just serve with a side of veggies that have been cooking in oil and garlic.
