Stir-fried chicken ‘n’ veg was the best I’ve done
Days of experience paid off in this medley of flavours.
I made this up as I went along. Some shallots in the wok first, followed a few minutes later by finely sliced garlic and shredded ginger. Then the chicken chunks, stirred for a bit. Then chopped chillies, sweetcorn, and French beans.
Broccoli and mushrooms last. Pre-cooked jasmine rice added in the middle while everything else was pushed aside. Whole anointed with fish sauce, soy, and Maggi seasoning. Chicken was not overcooked for once, veg was pleasingly firm.
Cooked, and served, with four bottles of Thai beer. Now make like Pontius and wash your hands.
