Grilled stuffed zucchini. Not too bad of a first attempt. I think this would have done better in the oven due to all the cheese and getting the zucchini cooked. This is a little bigger zucchini, I took a spoon to scoop out the seeds after I had cut it in half length wise. The filling is made up of ricotta cheese, parmesan cheese, pizza cheese blend, tomato sauce, small hunks of pepperoni and a few seasonings. I think next time I will do a bit less filling and maybe some diced onion and peppers for a little texture. Do any of you stuff zucchini and what with?

I haven't done stuffed zucchini yet but it looks soo delicious. Last time when I had zucchini I did some vegetable pancakes maybe I will post it soon if I find it 😀

I have a friend that cuts his garden zucchini in to thick slices and uses them as a crust substitute for miniature pizzas. Super yummy 👍
