Stir Fried Pumpkin aka Pad Faak Thong
4 cups of pumpkin - diced
2 tablespoons of finely chopped garlic
6 tablespoons of vegetable oil
3-4 birds eye chillies - bruised in a pestle and mortar
2 handfuls of Thai sweet basil - leaves removed from the stems and washed
2 tablespoons of fish sauce
1 tablespoon light soy sauce
a pinch of sugar
1 cup of chicken stock
Fry the garlic in the oil and when it starts to turn golden add the chillies and season with fish sauce.
Add the pumpkin and the stock then cover with a closely fitting lid and allow the dish to steam for a few minutes.
When the pumpkin is cooked through but still firm season with soy sauce and sugar
Briefly stir through the basil and remove from the heat.
Place on a serving platter and enjoy.
