The Afterparty Special: Lechon Paksiw
When there’s leftover lechon post-celebration, it becomes Lechon Paksiw – it’s tradition. Everyone looks forward to this tangy and savory stew!
Paksiw is a term associated to a dish that is cooked with vinegar and garlic. Lechon Paksiw is a Filipino pork dish made from leftover roast pig which is known as “Lechon”. Aside from using roast pig, leftover Lechon kawali or Crispy Bagnet can also be used. Making this dish is a practical way to recycle leftover pork. Instead of reheating the same dish over and over, making paksiw out of it makes the pork more flavorful bringing more life to the ingredient.
Paksiw na Lechon is one of my favorite dish that i wasn't able to eat often because Lechon is a bit expensive and is eaten only whenever there is a special occasion. Everytime i craved for it i usually buy the take out one or sometimes cooked Pork Paksiw instead which is similar but made from Pork Belly ( fried before stewed)
