The Curfew Diaries from Sri Lanka goes Royal with purple yams
The Garden Fresh Series continues, with the King Yam's journey from the garden to the table
Covered with rich loamy soil, the King Yam (Purple Yam, ube, or greater yam, take your pick) together with more chilli. Yes, we probably could have waited a bit longer, which would have meant a bigger yam, but hey. Live and learn, huh?
Held under a tap, and rubber with a rough sponge
A rough wash later, the colours start to pop.
Living up to its name...
To get it to this stage really took an effort.
Didn't plan to use the whole yam...
Have you ever seen anything like this? 😍
Potato peeler put to good use...
Any peeler would do...
That's where all the roots have gone...
You'd think the fibres go at this stage - you'd be wrong.
Cut and diced... and mashed
The colour never goes.
Mashed and seasoned
Medium heat and constantly stirred. Constantly...
It's done.
A bowl full of smiles. And silence, as it was enjoyed. And while all this was happening... we had a visitor drop in.

The colour is amazing, right? It was seasoned with a bit of salt. The whole recipe is king yam, a bit of coconut milk to get the consistency you want and salt. That’s it!
