The dish you need right now: Grilled salmon and mango salsa recipe

Ah remember tucking into a plate of fish tacos on holiday? The fresh seafood flavours combined with a sweet, but sharp snap of tangy mango salsa and that all important lettuce crunch. Delicious. But, be honest, are you left with sticky sleeves pondering whether the taste vs mess pay off is actually worth it? Thought so.
Allow us to offer up a grown-up fancier take on the fish taco — a deconstructed version if you will (we won't) — that's healthy, super tasty and easy to make at home. Here we give you grilled salmon steaks and a home-made mango salsa (we suggest you make extra for dips).

A dish to brighten up the darkest winter days, guaranteed
Ingredients
- 4 salmon fillets
- 1 mango
- 1/2 red onion
- 1/2 red pepper
- 1 small bunch of coriander
- 1/2 green pepper
- 2 limes
- 1 teaspoon of powdered garlic
- Vegetable oil
- Salt & Pepper
Instructions
- Peel and cut the mango into small cubes. Cut the peppers into cubes of equal size and finely chop the onion, green pepper and coriander leaves. Mix everything with the lime juice. Season with salt and pepper and set aside.
- Mix the garlic powder with 1/2 teaspoon of salt and pepper. Sprinkle the mixture over the salmon fillets and drizzle with oil.
- Turn on the grill. Select the (fish) program and press OK. As soon as preheating is complete, put the salmon fillets on the grill and close it.
- Cook as shown on the display, until they are cooked as wanted.
- Arrange the salmon fillets on the plates, drizzle over the remaining lime juice and serve with mango salsa.
